Smoked some chicken wings yesterday. I used a combo of hickory and apple wood. Smoked for 2 hrs at 235. Then Into the oven at 450 to crisp.
Grilled a backstrap for Sunday brunch
Soaking crawfish tails in egg and milk with black pepper and creole seasoning. In an hour fried crawfish tails for crawfish po boys! Already have my remoulade made too.
