New Gas Smoker

    Just picked up a new Masterbuilt XL 44" propane smoker and was wondering if any of you had any tips or tricks you would be willing to share. Such as water pans, wood pans, seasoning the smoker,insulating, etc...This is my 1st smoker. Thanks.

    Line the water pan with foil before using. Makes clean up a lot easier.

    Use 2 or 3 good sized wood chunks instead of filling the pan with little chips. Chunks smolder, chips tend to catch fire and burn, thus spiking your temp.

    I have the same smoker I threw the small wood chip box away that came with it and replaced it with a small cast iron skillet works much better

    Put wood and water in it and heat it up pretty warm for an hour or so to season it. Like 400 degrees or so
