I could see me coming up a few fingers short swinging a blade that fast.

Wow. That's impressive. Wonder what kind of knife he used that stayed so sharp? Takes me about 20-30 min.

Look at the background. The FRP wall panels. Stainless sink. Other deer on the floor. Pro grade meat hanger. That's a processing shop/operation. And i'd bet that old boy does that a lot. But I mean no disrespect. He has it down to a science. And its darn impressive. :thumb:

I bet he used an air compressor to loosen up the skin on the carcass. It just feel away to easy even for a pro butcher.

He ain't scared to get up in it. Having the legs prepped helps alot as far as starting everything. I wouldn't want to be standing around him. Put him with that dude that deboned one in less than 8 minutes and you have a deer on the hoof to being ready for the grinder in less than 10 minutes.

Yep, that dude that de-boned in 8 minutes was awesome, needs to give some classes on that and what kind of blade and how to get it that sharp!!

Yep they must of pumped that hide with air to loosen it from the meat. He is still awsome with a knife.
