Look at the background. The FRP wall panels. Stainless sink. Other deer on the floor. Pro grade meat hanger. That's a processing shop/operation. And i'd bet that old boy does that a lot. But I mean no disrespect. He has it down to a science. And its darn impressive.
He ain't scared to get up in it. Having the legs prepped helps alot as far as starting everything. I wouldn't want to be standing around him. Put him with that dude that deboned one in less than 8 minutes and you have a deer on the hoof to being ready for the grinder in less than 10 minutes.
